Steak Quesadillas are a delicious fusion of tender, flavorful steak with melty cheese, all sandwiched between crispy tortillas. Originating from Mexico, quesadillas traditionally feature cheese and various fillings folded into tortillas. When topped with grilled steak, they elevate to a hearty, protein-packed dish. Ingredients

  • 1 lb flank steak or sirloin steak
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped cilantro (optional)
  • Sour cream for serving
  • Salsa for serving

Instructions

    Preheat a grill or skillet over medium-high heat.

    In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper. Rub this spice mixture evenly over both sides of the steak.

    Drizzle olive oil on the steak and grill for about 4-5 minutes per side, or until cooked to your desired doneness. Let it rest for 5 minutes, then slice thinly.

    Reduce heat to medium and place a tortilla on the skillet. Sprinkle half with shredded cheddar and Monterey Jack cheese.

    Layer some sliced steak on one half of the tortilla, then top with a little more cheese. Fold the tortilla over to enclose the filling.

    Cook for 2-3 minutes until the bottom is golden brown, then carefully flip and cook another 2-3 minutes until the other side is crispy and the cheese is melted.

    Remove from heat and cut into wedges. Repeat with remaining tortillas and filling.
