Vietnamese Chicken Pho

Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 8 cups chicken broth
- 1 large onion, sliced
- 3-inch piece of ginger, sliced
- 3 cloves garlic, smashed
- 1 tbsp fish sauce
- 8 oz rice noodles
- 1 cup bean sprouts
- Fresh basil leaves
- Lime wedges
- Thinly sliced green onions
- Fresh cilantro (optional)
- Sriracha or hoisin sauce (optional)
- Salt and pepper to taste
Instructions

In a large pot, combine chicken breasts, chicken broth, sliced onion, ginger, garlic, and fish sauce. Bring to a boil, then reduce heat and simmer for 25-30 minutes to infuse flavors.

Remove the chicken from the broth and set aside to cool. Strain the broth to remove solids and return it to the pot, keeping it warm.

While broth simmers, cook the rice noodles according to package instructions. Drain and set aside.
