Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 bell peppers, sliced (any color)
- 1 large onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional for heat)
- Juice of 1 lime
- Salt and pepper to taste
- 8 small flour tortillas
- Fresh cilantro, chopped (for garnish)

In a small bowl, combine chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Toss the shrimp in the spice mixture until evenly coated.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes per side until pink and cooked through. Remove from skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add sliced peppers, onions, and minced garlic. Sauté for 5-7 minutes until vegetables are tender and slightly charred.

Return the cooked shrimp to the skillet with the vegetables. Squeeze fresh lime juice over the mixture and toss to combine. Cook for another 1-2 minutes to meld flavors.

Warm the flour tortillas in a dry skillet or microwave until soft.
