Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 bell peppers, sliced (any color)
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional for heat)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Fresh cilantro, chopped (for garnish)

Instructions

    In a small bowl, combine chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Toss the shrimp in the spice mixture until evenly coated.

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes per side until pink and cooked through. Remove from skillet and set aside.

    In the same skillet, add the remaining 1 tablespoon of olive oil. Add sliced peppers, onions, and minced garlic. Sauté for 5-7 minutes until vegetables are tender and slightly charred.
