Indulge in this flavorful Seafood Linguine, a classic Italian dish that combines tender pasta with a medley of fresh seafood and aromatic herbs. Perfect for a quick and elegant dinner, this recipe offers a delightful blend of briny and savory notes in every bite.

Ingredients

  • 8 oz linguine pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup white wine (optional)
  • 1 lb mixed seafood (shrimp, scallops, mussels)
  • 1 cup cherry tomatoes, halved
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • Salt and black pepper to taste
  • 1 oz grated Parmesan cheese (optional)

Instructions

  1. 1

Cook the linguine in a large pot of salted boiling water until al dente, then drain and set aside.

  2. 2

Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  3. 3

Add the mixed seafood to the skillet and cook until the shrimp turn pink and scallops are opaque, about 3-4 minutes.

  4. 4

Pour in white wine (if using) and cook for 2 minutes to reduce slightly.

  5. 5

Add cherry tomatoes and red pepper flakes; cook for another 2 minutes until tomatoes soften.

  6. 6

Stir in lemon juice, cooked linguine, and season with salt and black pepper.

  7. 7

Toss everything together until well combined and heated through.

  8. 8

Remove from heat and sprinkle with chopped parsley and Parmesan cheese (if desired).

  9. 9

Serve immediately garnished with extra parsley and lemon wedges if preferred.
