Ingredients
- 1 baguette (French bread)
- 4 oz grilled pork (or chicken/tofu for variation)
- 1/4 cup mayonnaise
- 1 tbsp soy sauce
- 1 small cucumber, sliced
- 1/4 cup pickled carrots and daikon radish
- Fresh cilantro leaves
- 2-3 slices jalapeño pepper
- 1 small red onion, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tbsp vegetable oil
- Salt and pepper to taste
- Optional: pâté or Vietnamese cold cuts

Prepare the pickled vegetables by combining rice vinegar, sugar, salt, and water in a bowl. Add carrots and daikon radish, and let sit for at least 30 minutes.

Slice the baguette lengthwise, leaving a hinge to hold the fillings.
