Ingredients

  • 1 lb chicken thighs or breasts, boneless and skinless
  • 1/4 cup soy sauce
  • 3 tbsp mirin (sweet rice wine)
  • 2 tbsp sake (Japanese rice wine)
  • 2 tbsp sugar
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • Sesame seeds (for garnish)
  • Sliced green onions (for garnish)

Instructions

    In a small bowl, combine soy sauce, mirin, sake, sugar, minced garlic, and grated ginger to make the teriyaki sauce. Stir until sugar dissolves.

    Cut the chicken into bite-sized pieces or leave whole if preferred. Pat dry with paper towels.

    Heat vegetable oil in a large skillet over medium heat. Add chicken pieces and cook until golden brown on both sides, about 4-5 minutes per side if cut into pieces.

    Pour the teriyaki sauce over the chicken in the skillet. Bring to a gentle simmer.

    Cook the chicken and sauce together for another 5-7 minutes, or until the sauce thickens and coats the chicken nicely.

    Remove from heat and let rest for a minute. Garnish with sesame seeds and sliced green onions.
