Com Tam (Broken Rice)

Com Tam, known as broken rice, is a beloved Vietnamese dish celebrated for its unique texture and flavorful accompaniments. The rice's ruptured grains are soft and fluffy, creating the perfect base for savory toppings like grilled meats, pickles, and sunny-side-up eggs. Originating from the southern regions of Vietnam, Com Tam got its name from the broken rice grains traditionally discarded in favor of whole grains. Farmers, however, recognized their potential and transformed them into a delicious staple. Over time, Com Tam grew in popularity, becoming a symbol of street food culture—quick, affordable, and irresistibly tasty.
Ingredients
- 2 cups broken rice
- 1/2 lb grilled pork chop (suon twop or similar) or grilled chicken
- 1/4 cup fish sauce
- 2 tablespoons sugar
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 cucumber, sliced
- Pickled vegetables (daikon and carrot)
- 2 eggs
- Fresh herbs (cilantro, scallions)
- Salt to taste
- Black pepper to taste
- Lettuce leaves for serving
- Crushed peanuts (optional)
Instructions

Rinse the broken rice in cold water until the water runs clear. Drain well.

Cook the rice in a rice cooker or pot according to package instructions until tender. Set aside and keep warm.

Marinate the grilled meat with fish sauce, sugar, minced garlic, and a pinch of salt for at least 30 minutes.

Heat vegetable oil in a skillet over medium heat. Cook the marinated pork chop or chicken until fully cooked and slightly caramelized, about 4–6 minutes per side.

In the same skillet, fry the eggs sunny-side-up to your preferred doneness.

Prepare the pickled vegetables by soaking sliced daikon and carrots in vinegar with a bit of sugar and salt for at least 30 minutes.

To serve, place a bed of warm broken rice on a plate. Top with the grilled meat, fried egg, and fresh herbs.

Add cucumber slices, pickled vegetables, and a small bowl of fish sauce on the side for dipping.
