Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 2 tbsp unsalted butter, melted
- 1/4 tsp salt
- 4-6 slices of ham
- 1 cup shredded Gruyère cheese (or Swiss cheese)
- Butter or oil for cooking
- Optional: chives or parsley for garnish

In a bowl, whisk together the flour and salt. Make a well in the center and add the eggs, gradually whisking in the milk until the batter is smooth and thin.

Stir in the melted butter. Let the batter rest for about 15 minutes to improve the texture.

Heat a non-stick skillet or crêpe pan over medium heat and lightly grease with butter or oil.

Pour about 1/4 cup of batter into the pan, swirling to spread evenly and form a thin layer. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden.

Flip the crêpe and cook for another 30 seconds. Transfer to a plate and keep warm.

Repeat with the remaining batter, stacking the cooked crêpes and keeping them warm under foil if desired.
