Ingredients

  • 4 large yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 4 cups beef broth
  • 1 cup dry white wine (optional)
  • 1 bay leaf
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper to taste
  • 8 slices baguette, toasted
  • 1 ½ cups grated Gruyère cheese
  • 1 tbsp all-purpose flour (optional, for thickening)

    In a large, heavy-bottomed pot, melt the butter with olive oil over medium heat.

    Add the sliced onions and sugar, stirring occasionally. Cook for about 30-40 minutes until onions are deeply caramelized, stirring frequently to prevent burning.
