Gyoza, also known as Japanese dumplings, are a beloved street-food favorite that combines savory fillings with a crisp yet tender exterior. Each bite offers a perfect balance of juicy meat and aromatic vegetables, making gyoza an irresistible appetizer or main course, perfect for sharing during casual meals or special gatherings.

Originating from Chinese jiaozi, gyoza were adapted in Japan in the early 20th century, evolving into their own distinct style with thinner wrappers and flavorful fillings. Today, they are enjoyed nationwide, often pan-fried to achieve that golden, crispy bottom paired with steamed softness on top—a signature texture loved by many across the globe.

Ingredients

  • 1 lb ground pork
  • 1 cup finely chopped cabbage
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp grated ginger
  • 2 scallions, finely chopped
  • 24 round gyoza wrappers
  • 2 tbsp vegetable oil
  • 1/4 cup water
  • Salt and pepper to taste

Instructions

    In a large bowl, combine ground pork, chopped cabbage, minced garlic, soy sauce, sesame oil, grated ginger, scallions, salt, and pepper. Mix well until thoroughly blended.

    Place a gyoza wrapper in the palm of your hand. Spoon about 1 teaspoon of filling into the center of the wrapper.

    Dip your finger in water and moisten the edge of the wrapper. Fold the wrapper in half to form a half-moon shape, pinching the edges to seal tightly and pleating if desired.

    Repeat with remaining wrappers and filling.

    Heat vegetable oil in a non-stick skillet over medium-high heat. Place gyoza in a single layer, flat side down.

    Cook until the bottoms are golden brown, about 2-3 minutes.

    Add 1/4 cup water to the skillet, then cover immediately with a lid. Steam the gyoza until the filling is cooked through and the water has evaporated, about 5 minutes.

    Remove the lid and cook for an additional minute to re-crisp the bottoms.

    Serve hot with soy sauce, rice vinegar, or your favorite dipping sauce.
