Ingredients

  • 2 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 1/2 cup finely chopped jamón serrano
  • 1/2 cup grated Manchego cheese
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. 1

In a saucepan, melt the butter over medium heat.

  2. 2

Add the flour and whisk continuously to create a smooth roux, cooking for about 2 minutes.

  3. 3

Gradually pour in the milk, whisking constantly to prevent lumps until the mixture thickens.

  4. 4

Stir in the chopped jamón and grated Manchego cheese until well combined. Season with salt and pepper to taste.

  5. 5

Transfer the mixture to a bowl and let it cool to room temperature, then cover and refrigerate for at least 2 hours or until firm.

  6. 6

Once chilled, shape the mixture into small, oval or round croquettes.

  7. 7

Beat the eggs in a shallow dish. Place panko breadcrumbs in another dish.

  8. 8

Dip each croquette into the beaten eggs, then roll in the panko breadcrumbs to coat evenly.

  9. 9

Heat vegetable oil in a deep-fryer or large skillet to 350°F (175°C).

  10. 10

Fry the croquetas in batches until golden brown and crispy, about 3-4 minutes.

  11. 11

Remove with a slotted spoon and drain on paper towels.

  12. 12

Serve hot, garnished with fresh herbs if desired.
