Ingredients
- 8 oz sweet potato glass noodles (dangmyeon)
- 2 tbsp vegetable oil
- 3 oz beef sirloin, thinly sliced
- 1 small carrot, julienned
- 1 small bell pepper, thinly sliced
- 3 green onions, chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1 cup spinach, blanched and chopped
- 1 small onion, thinly sliced
- Sesame seeds for garnish
- Salt and pepper to taste

Cook the glass noodles in boiling water according to package instructions until tender. Drain and rinse with cold water. Set aside.

In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced beef and cook until browned. Remove from the pan and set aside.

In the same pan, add garlic, onion, carrot, and bell pepper. Sauté for 3-4 minutes until vegetables are tender-crisp.

Add the cooked beef back to the pan along with the spinach. Stir in soy sauce, sesame oil, and sugar. Cook for another 2 minutes to combine flavors.

Add the drained noodles to the pan. Toss everything together gently to coat the noodles evenly with the sauce and vegetables.

Taste and adjust seasoning with salt and pepper as needed. Continue tossing until well mixed and heated through.
