Ingredients

  • 2 cups aged kimchi, chopped
  • 1/2 pound pork belly, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp gochugaru (Korean red pepper flakes)
  • 4 cups water or broth
  • 2 tbsp soy sauce
  • 1 block (14 oz) firm tofu, cubed
  • 1 green onion, sliced (for garnish)
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

    Heat sesame oil in a large pot over medium heat. Add sliced pork belly and cook until browned and slightly crispy.

    Add minced garlic and sliced onion to the pot; sauté until fragrant and onion begins to soften.

    Stir in the chopped kimchi and cook for 5 minutes to deepen the flavors.

    Pour in water or broth, then add soy sauce and gochugaru. Bring to a boil.

    Reduce heat and let simmer for about 20 minutes, allowing the flavors to meld.
