Massaman Curry

Ingredients
- 2 tbsp vegetable oil
- 1 lb beef or chicken, cut into chunks
- 1 large onion, sliced
- 2 medium potatoes, cubed
- 3 tbsp Massaman curry paste
- 1 can (13.5 oz) coconut milk
- 3 tbsp roasted peanuts, chopped
- 1 tbsp fish sauce
- 1 tbsp tamarind paste
- 1 tsp sugar
- 1 cinnamon stick
- 2 cardamom pods
- 1/2 tsp ground cumin
- Salt to taste
- Optional: lime wedges and fresh cilantro for garnish
Instructions

Heat vegetable oil in a large pot over medium heat. Add the Massaman curry paste and sauté for about 2 minutes until fragrant.

Add the sliced onion to the pot and cook until softened, about 3 minutes.

Stir in the meat chunks and cook until browned on all sides, approximately 5 minutes.

Pour in the coconut milk, stirring well to combine the curry paste with the liquid.

Add the potatoes, cinnamon stick, cardamom pods, cumin, fish sauce, tamarind paste, and sugar. Stir to combine.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45 minutes, or until the meat and potatoes are tender.
