Pad See Ew is a beloved Thai street food favorite, renowned for its perfect balance of savory, smoky flavors and chewy rice noodle texture. The dish features wide rice noodles stir-fried with fragrant garlic, tender strips of meat (often pork or chicken), crisp Chinese broccoli, and a savory soy-based sauce. It's a comforting yet flavorful meal that’s perfect for weeknight dinners or casual gatherings.

Originating from the bustling streets of Thailand, Pad See Ew translates to 'stir-fried soy noodles.' Its popularity skyrocketed due to its simple ingredients and irresistible flavor profile, making it a staple in Thai households and street stalls alike. Authentic Pad See Ew captures a smoky charred aroma, known as 'wok hei,' which elevates the dish to new heights of deliciousness.

Ingredients

  • 8 oz wide rice noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 lb chicken breast or pork, sliced thinly
  • 2 cups Chinese broccoli, chopped
  • 3 tbsp soy sauce (light or dark)
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp white pepper (optional)
  • 1 egg (optional, for added richness)

Instructions

  1. 1

Cook the rice noodles according to package instructions. Drain and set aside.

  2. 2

Heat vegetable oil in a large wok or skillet over medium-high heat.

  3. 3

Add minced garlic and stir-fry until fragrant, about 30 seconds.

  4. 4

Add sliced chicken or pork, stirring until cooked through, about 3-5 minutes.

  5. 5

Push the meat and garlic to one side of the wok. If using an egg, crack it into the empty side and scramble until just set.

  6. 6

Add the cooked noodles to the wok, tossing to combine with the meat and garlic.

  7. 7

Stir in soy sauce, oyster sauce, sugar, and white pepper. Toss well to evenly coat the ingredients.

  8. 8

Add Chinese broccoli and stir-fry for another 2-3 minutes until the greens are tender but still vibrant.

  9. 9

Taste and adjust seasoning if needed. Serve hot topped with additional soy sauce or chili flakes if desired.
