Ingredients
- 4 large potatoes, diced into bite-sized pieces
- 3 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and freshly ground pepper to taste
- Fresh parsley, chopped (for garnish)
- Optional: aioli or mayonnaise for serving

Preheat the oven to 425°F (220°C). Toss the diced potatoes with 1.5 tablespoons of olive oil and season with salt and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.

While potatoes roast, heat the remaining 1.5 tablespoons of olive oil in a saucepan over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the crushed tomatoes, smoked paprika, cayenne pepper, salt, and pepper. Simmer the sauce for 10-15 minutes, stirring occasionally, until it thickens slightly.

Taste and adjust seasoning if needed. If you prefer a smoother sauce, blend it briefly with an immersion blender or regular blender.

Once the potatoes are roasted, toss or spoon the crispy potatoes into the sauce, ensuring they are well coated.
