Tonkatsu is a beloved Japanese comfort food that offers a satisfying combination of crispy exterior and juicy, tender pork inside. Perfect for a hearty lunch or dinner, this dish is known for its crunchy panko breadcrumb coating and flavorful sauce that elevates each bite. Its balanced texture and rich taste make it a favorite across Japan and around the world.

Originating in early 20th-century Japan, Tonkatsu was inspired by Western-style breaded cutlets introduced during the Meiji era. The name 'Tonkatsu' blends 'ton' (pork) and 'katsu' (cutlet), reflecting its main ingredient and cooking style. Over time, Tonkatsu has become a staple in Japanese cuisine, often served with shredded cabbage, rice, and a tangy sauce, showcasing its enduring popularity and cultural significance.

Ingredients

  • 4 boneless pork loin chops (about 1 inch thick)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups panko breadcrumbs
  • Salt and freshly ground black pepper
  • Vegetable oil for frying
  • Tonkatsu sauce for serving
  • Shredded cabbage (optional garnish)
  • Cooked rice (optional side)

Instructions

  1. 1

Season the pork loin chops with salt and pepper on both sides.

  2. 2

Place the flour in a shallow bowl, the beaten eggs in another, and the panko breadcrumbs in a third dish.

  3. 3

Dredge each pork chop in flour, shaking off excess.

  4. 4

Dip the floured pork into the beaten eggs, then coat thoroughly with panko breadcrumbs, pressing gently to adhere.

  5. 5

Heat vegetable oil in a deep skillet or frying pan over medium heat until hot (about 350°F / 175°C).

  6. 6

Carefully place the breaded pork chops into the hot oil, avoiding overcrowding.

  7. 7

Fry until golden brown and cooked through, about 4-5 minutes per side, depending on thickness.

  8. 8

Remove the Tonkatsu from the oil and drain on paper towels to remove excess oil.

  9. 9

Slice the Tonkatsu into strips and serve hot with tonkatsu sauce or your favorite dipping sauce.

Optional: Garnish with shredded cabbage and serve alongside rice for a complete meal.
