Yakitori is a beloved Japanese street food and izakaya classic that captures the essence of Japanese grilling culture. Tender pieces of chicken, often with a delightful char, are skewered and glazed with a savory-sweet soy-based sauce, creating a perfect balance of umami and sweetness. It's a popular dish at festivals, casual gatherings, and dinner tables alike, celebrated for its flavorful simplicity.

The name 'Yakitori' translates to 'fire grilled' chicken, reflecting its traditional cooking method over binchotan charcoal. Originating from Japanese street vendors in the Edo period, yakitori has grown into a national favorite, appreciated worldwide for its smoky aroma and juicy texture. Whether enjoyed with a cold beer or as part of a multi-dish meal, yakitori remains an iconic symbol of Japanese cuisine and social dining.

Ingredients

  • 1 lb chicken thighs or breast, cut into 1-inch pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin (sweet rice wine)
  • 2 tablespoons sake
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 8-10 bamboo skewers, soaked in water for 30 minutes
  • 1 tablespoon vegetable oil (for grilling, if using a pan)
  • Sesame seeds and chopped green onions (for garnish)

Instructions

  1. 1

In a bowl, whisk together soy sauce, mirin, sake, sugar, garlic, and ginger to make the yakitori glaze marinade.

  2. 2

Add the chicken pieces to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

  3. 3

Preheat your grill to medium-high heat, or heat a grill pan on the stovetop. If using a charcoal grill, prepare the coals for direct heat.

  4. 4

Thread the marinated chicken pieces onto the soaked bamboo skewers, dividing evenly.

  5. 5

Lightly oil the grill grates or the pan to prevent sticking.

  6. 6

Place the skewers on the hot grill and cook for about 3-4 minutes per side, basting with the remaining marinade and turning to achieve an even char.

  7. 7

Continue grilling until the chicken is cooked through and glazed with a glossy finish, about 10-12 minutes total.

  8. 8

Remove from the heat and let rest for a few minutes. Garnish with sesame seeds and chopped green onions.

  9. 9

Serve hot, paired with steamed rice or your favorite sides for a delicious Japanese meal.
