Yangzhou Fried Rice

Yangzhou Fried Rice is a beloved Chinese classic that delights with its harmonious blend of flavors and textures. Ingredients
- 3 cups cooked jasmine rice (preferably day-old rice)
- 2 tbsp vegetable oil
- 2 eggs, beaten
- 1/2 cup cooked shrimp, peeled and deveined
- 1/2 cup diced cooked ham or char siu
- 1/4 cup chopped scallions
- 1/4 cup frozen peas, thawed
- 2 tbsp soy sauce
- 1 tsp oyster sauce (optional)
- 1 tsp sesame oil
- Salt and pepper to taste
- 1 small carrot, diced
- 1/4 cup chopped cooked chicken (optional)
- 1/4 cup chopped cooked squid (optional)
Instructions

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Add beaten eggs and scramble until just set. Remove eggs and set aside.

Add remaining oil to the wok, then stir-fry shrimp, ham, and diced carrot until heated through and slightly browned.

Add the cooked rice to the wok, breaking up any clumps with a spatula. Stir-fry for 2-3 minutes to ensure rice is evenly coated and heated.

Stir in cooked eggs, chopped scallions, peas, soy sauce, oyster sauce (if using), and sesame oil. Mix well to combine.

Season with salt and pepper to taste. Continue stir-frying for another 2 minutes to blend flavors.

If using, add cooked chicken or squid and stir-fry for another minute.

Remove from heat and serve hot, garnished with extra scallions if desired.
